INGREDIENTS:

  • Spinach/palak – 1 bunch
  • Cottage cheese/paneer – 12 cube
  • Ginger – 1 inch
  • Garlic – 1 clove
  • Green chillies (chopped) – 3-4
  • Onion (finely chopped) – 2
  • Tomato (finely chopped) – 2
  • Oil – 2 tbsp
  • Cumin seeds – 1 tsp
  • Bay leaves – 2
  • Cinnamon – 1 inch
  • Cloves – 4
  • Cardamom – 2
  • Fenugreek leaves/ kasuri methi – 2 tsp
  • Turmeric powder – 1 tsp
  • Coriander powder – 1 tsp
  • Red chilli powder – 1 tsp
  • Cumin powder – 1/2 tsp
  • Garam masala powder – 2tsp
  • Salt to taste
  • Water as required
  • Fresh cream – 2 tbsp

PROCESS:

  • Heat a pot and boil 2 ltr of water add spinach leaves in the hot water and boil it for 2 minutes.
  • Take it out from boiling water and put it into chilled water.
  • Now, take out the leaves in a blending jar add 1 inch ginger, 1 clove garlic, green chillies, and blend it into smooth paste.Keep it aside.
  • Heat a kadai add 2 tbsp of oil add cumin seeds, bay leaves, cinnamon, cloves, cardamom and saute them for few seconds.
  • Further, add onion and fry till onion turns golden brown.
  • Now, add turmeric powder, red chilli powder, cumin powder, coriander powder and mix well.
  • Add tomato into it and salt to taste cook till tomato turns soft.
  • Further, add the prepared paste and little water adjust consistency according to you. Stir it and cook ot for 3 to 4 minutes on medium flame.
  • Add paneer cubes and mix gently. Simmer it for 2 to 3 minutes on medium flame.
  • Now, add garam masala powder, kasuri methi and fresh cream mix it well and cook it for 1 to 2 minutes.
  • Turn off the flame and garnish it with fresh cream.
  • Palak paneer is ready to serve.
